Vyn
Simrishamn, SkAne county, Sweden
Very few dining rooms embody modern elegance like Daniel Berlin's two-Michelin-starred Vyn. With expansive windows framing farmland that stretches down to the Baltic Sea, the space features bare wood floors and tables, and a soothing color scheme of gray tones.
The seasonal menu features ingredients from land and sea in Berlin, including foraged and hunted items. Examples of dishes might include langoustine cooked in brown butter; a combination of raw shrimp, white beetroots, walnuts, and cream from Fjällko cattle; or cockles paired with smoked red deer heart and roasted barley.
The converted farmhouse also includes 15 serene guest rooms and a more casual food and wine bar. VYN, located about a seven-hour drive south of Stockholm or a two-hour journey by train (three hours with train) over the eight-kilometre Øresund Bridge from Copenhagen, is worth visiting because once you arrive, you may not want to leave.
Venissa
Mazzorbo, Venice, Italy
A peaceful atmosphere envelops as we disembark from the water taxi navigated through the congested streets of San Marco. Upon reaching the dock in front of the restaurant, a picturesque structure with an ivory-painted facade and charming wooden shutters greets us, setting a tranquil tone.
Here, chefs Chiara Pavan and Francesco Brutto prepare a delectable, sustainability-driven tasting menu specifically centered on invasive species. This menu highlights species such as voracious blue crabs and halophytes (salt-resistant plants) that have overrun new areas due to increasing soil salinity in Venice. The dishes boast vibrant creativity and colour, often featuring bright petals, with ingredients grown in the vast kitchen garden.
After lunch, take a leisurely walk through the medieval walled vineyard planted with indigenous Vento grapes from Venice to the 14th-century bell tower at the estate. Spend the night in one of the cozy rooms located above the restaurant, or cross the bridge to the island of Burano, renowned for its intricately made lace and brightly coloured buildings, where additional accommodations are available at Venissa.
Naar
Darwa, Himachal Pradesh, India
The closest airport, located in the city of Chandigarh, designed by Le Corbusier, is approximately two hours away via dusty, winding, and potholed roads. From there, a golf cart will transport you up the final incline to the collection of mountain huts that comprises Naar, a pioneering restaurant founded by chef Prateek Sadhu, which opened late last year.
Located 1,500 metres up in the foothills of the Himalayas, Naar provides breathtaking views of the Earth's highest mountains, in addition to a unique gastronomic experience that showcases local ingredients sourced primarily from the Himalayan region.
The dishes range from the delicate almond ricotta with marinated grapes and cape gooseberries, topped with thinly sliced pickled water chestnut and edible flowers in the form of mustard plants. This array also includes an innovative take on Uttarakhand soup noodles, originally from Tibet, consisting of hand-rolled noodles and rich, savory blood sausage.
A short walk from the dining room are the suites and villas of Amaya resort, which are thoughtfully designed to blend harmoniously with the wild hillsides featuring grass and pines.
L'Enclume

Located in a 13th-century blacksmith's workshop, this three-Michelin-starred (and green-starred) restaurant placed the quaint village of Cartmel, situated on the outskirts of England's picturesque Lake District, on the culinary map.
Rogan's flagship restaurant, L'Enclume, was established over two decades ago by renowned British chef Simon Rogan, a leading figure in the British farm-to-table movement. Located in Hong Kong, Thailand, Malta, and the UK, it is the epitome of his expanding culinary empire.
Fresh ingredients come from a 4.8-hectare biodynamic plot near the restaurant, where Rogan cultivates approximately 165 different fruits, vegetables, and herbs. His policy of using only local ingredients excludes items like lemons and vanilla from the kitchen; instead, he cultivates citrus-flavored oxalis and fragrant meadowsweet as alternatives.
Rogan has cozy rooms in various old stone buildings located throughout Cartmel, within easy walking distance of his more formal establishment, L'Enclume, his casual restaurant Rogan & Co, and his chef's table, Aulis. Customers can also purchase a variety of kitchen and household items for their homes, including L'Enclume forged butter knives and Anvil pale ale, as well as Home by Simon Rogan linen tea towels and coal oil.

Roš works closely with local farmers, foragers, shepherds, cheese producers, hunters, and fishermen, and grows her own produce and trout behind the restaurant. Guests staying overnight in one of the charming rooms in this 1861 country house with its striking salmon pink facade can enjoy a truly exceptional breakfast experience.
